I'm sharing my recipe. I love this one.



8 Roma tomatoes, diced
1/2 C. chopped basil
1/4 C. shredded Parmesan
2 cloves garlic, minced

Drizzle and toss with the following mixture:
1 Tbsp. balsamic vinegar
1 tsp. EVOO
1/4 tsp. salt
1 tsp. black pepper

Variation: Add one can of artichoke hearts, chopped.

Bruschetta is really versatile; kind of like salsa. It can be served on garlic bread, baguette slices, or you can use it in cooking such as a topper for grilled chicken breast. It also can be tossed with pasta.
