My old standbys are Velveeta w/ Ro-Tel for the cheese
and velveeta with a can of low sodium Hormel chili for the chili one

Super quick and easy and always pleases. I'm sure there are 'better' ones out there, but none easier

I make Queso dip with any salsa I have on hand, sour cream and velveeta cheese. Sorry I don't measure I just eyeball but, turns out great every time and it's quick.

This is supposed to be a copycat recipe similar to Moe's queso sauce. I have been holding onto it but haven't tried it yet.


1/2 onion, chopped
1 tablespoon oil
5 cups (20 ounces) shredded Monterey Jack cheese
2/3 cup heavy whipping cream
1/2 cup chopped canned hot peppers, such as jalapeno peppers, Hungarian hot peppers, or pepperoncini peppers*
2 firm tomatoes, peeled
Tortilla chips, for serving
Instructions:

1. Heat oil in a deep pan and saute onions for about 5 minutes or until they start to soften.

2. Reduce heat to low-medium low and add cheese, cream, and peppers. Cook and stir until mixture melts and becomes a creamy sauce.

3. Cut tomatoes in half and scrape out the seeds; discard seeds. Slice flesh into thin strips (about 1/4-inch wide and 1-2 inches long) and stir into sauce.

4. Warm tortilla chips on a tray in the oven at 350 degrees for 10 minutes or until hot. Pour the cheese sauce into a serving dish and serve warm, with the heated chips.

I use this one:

Chili's Skillet Queso
This is a copy cat of Chili's queso.

15 min prep
SERVES 10

* 1 (2 lb) Velveeta cheese
* 2 (14 ounce) cans no-bean chili

1. Heat together in a crockpot for a few hours or until cheese is melted.
2. For the most accurate texture, mix in blender.
3. Serve with heated corn chips.

one can Ro-Tel
1/2 pound hamburger, cooked and drained.

Do in either CP or on stove. Melt cheese, add Ro-tel and hamburger. Mix and eat. Yummy!!! Now you have me craving this dip.

This is the same recipe I use, except I add taco seasoning.

And I agree - Now I'm craving some, too!

One I got from my SIL...

8 ounces cream cheese
1 can (16 ounce or so) of no bean chili
1 small can of diced green chilies (4 to 6 ounces I think)
chili powder to taste

I make this on the stove or in a little crockpot
