SUPER YUMMY and WELL worth the time! I make a triple batch and always get complaints that they go too fast.
12 oz boneless chix breast
1/4 cup orange marmalade
2 tbs soy sauce
1/2 tsp ginger
1/8 tsp garlic powder
12 slices bacon
cut chicken into 24 bite size pieces. in a small bowl, combine marmalade, soy sauce, ginger and garlic powder. Add chicken pieces. Cover and chill 30 minutes.
Meanwhile, arrange bacon slices on unheated rack of broiler pan. broil 4-6" from heat 1-2 min or until partially cooked - NOT CRISPY. drain off fat. halve the slices crosswise. **bacon can be cooked in microwave approximately 30 seconds per slice**
Drain chicken pieces. wrap each piece of bacon around a piece of chicken and secure with a toothpick. Place on an unheated rack of broiler pan (use disposable ones - easy and keeps things going smoothly). broil 2-5 min or until chicken is no longer pink in the center, turning once. Makes 24.
