Default Ro-Tel Dips

Here is an easy to make dip that I am always asked to bring to a gathering!

Ingredients:
1 can Ro-Tel Original (drain juice off)
1 lb. pork sausage
1 8oz Cream Cheese

Brown the pork sausage well - drain off fat.
In microwave proof dish, melt cream cheese and ro-tel to a stirrable consistency. When hot, add pork sausage and heat entire mixture to desired temp. (depending on your microwave, this should not take long.)

Serve hot with Tostitos (Scoops are great for this) or other Corn Chip.

RO-TEL is a diced tomato and pepper mixture - not quite a salsa. I usually find it at the dollar stores, and in grocery stores either next to the tomato items.

You can adjust the *heat* of this by choosing mild vs. regular pork sausage. We prefer mild. ALSO - fry and drain the sausage ahead of time - superfast party dish to throw together in the microwave if your sausage is already cooked. I sometimes cook several 1 lb portions (package separately) and re-make this dish throughout the night at get-togethers when I know people are getting the *munchies* again. It's something fresh within about 2 minutes!
