Goat Cheese, Roasted Pepper, and Basil Appetizers

The combination of marinated goat cheese, roasted peppers, and fresh basil is perfect in its simplicity. I usually keep the ingredients around the house for a quick snack or for "instant entertaining" when guests drop by. These ingredients also make a great Italian "Panini" sandwich.
Serves 6-8 as an appetizer
1 recipe marinated goat cheese (or you can buy a jar of goat cheese or chevre in oil....I'm actually just using plain goat cheese when I make it tonight)
1 red bell pepper, roasted
1 yellow pepper, roasted (I found roasted red and yellow peppers in a jar at the store)
3-4 tbs fresh basil (not dried), chiffonade
1 large baguette
Slice baguette into 1-inch slices. Spread a layer of goat cheese onto each slice. Top with a strip or two of roasted pepper and a few strips of fresh basil.
If you prefer to serve this as an entree sandwich, just slice your baguette length-wise, spread with goat cheese, and top with roasted peppers and basil.
Since, I'm not using marinated goat cheese, I thought I'd just brush each slice of bread with a little olive oil and rub with a garlic clove before spreading cheese and topping with peppers and basil.
