(I am so in the mood for zucchini today...as you can tell w/all the zucchini recipes )

2 1/2 cs grated zucchini
1 egg, beaten
2 Tbs butter, melted
1 c bread crumbs
1/4 c minced onion
1 tsp old bay
1/4 c flour
1/2 c vegetable oil

Mix zucchini, egg, and butter or margarine.

Stir in seasoned crumbs, minced onion, and seasoning. Mix well.

Shape mixture into patties. Dredge in flour.

heat oil over med until hot. Fry patties til golden brown.
