This is my favorite thing to serve as appetizers it is great with wine..
When i first made it DH teased that his red neck family wouldn't like my foo foo california food, but they sure do ask me to make it all the time.

It is a bit time consuming, but sooooo worth it!
1 pint cherry tomatoes
> 4 ounces crumbled feta or blue cheese (i like feta best, the blue seems a bit overpowering, although if you don't fill the tomatoes as much they are tastey)
> 1/2 cup finely chopped red onion
> 1/2 cup olive or vegetable oil
> 1/4 cup red wine vinegar
> 1 tblspn dreid oregano
> salt and pepper taste
> > cut a thin slice off the top of each tomato.
scoop out and discard the pulp. (I use a small fruit baller)
invert tomatoes onto paper towels to drain.
Combine cheese and onion, spoon into tomatoes.
In a jar with a tight-fitting lid, combine oil, vinegar, oregano, salt and pepper, shake well. Spoon over tomatoes.
Cover and refrigerate for at least 30 minutes or until ready to serve.
