This is a little time consuming but worth it. I make about 3 batches of this stuff at Christmas time.
7 quarts plain popped popcorn
2 cups dry roasted peanuts-optional
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1 cup margarine/butter-which ever you prefer
1/2 teaspoon baking soda
1 teaspoon vanilla
Divide popcorn and place in 2 shallow greased roasting pans-disposable pans work great. Add peanuts and set aside. Preheat oven to 250*. Combine brown sugar, corn syrup, margarine, and salt in saucepan. Bring to boil over medium heat, stirring until smooth and sugar is melted. Once mixture begins to boil, boil for five minutes stirring constantly. Remove from heat and stir in baking soda and vanilla. Mixture will become light and foamy. Immediately pour over popcorn. Stir to coat. Dont worry about getting all popcorn completely coated. Bake for one hour, removing pans and stirring popcorn every 15 minutes. Line counters with wax paper. Dump the popcorn onto the wax paper and seperate into pieces. Allow to cool completely. Store in airtight containers or bags.
