Default In search of Salsa Recipe

I am going to be canning tomatos this weekend and wanted to try canning salsa. Does anyone have a favorite recipe that they use? I have never made it before so I would like something I know will be good!

I use the salsa mix that is in the canning section of Walmart or your grocery store. It is really easy. You just mix the package with fresh tomatoes. Theirs calls for you to refridgerate - but I just pour into my hot jars and process in hot bath for about 15 minutes.

My mother and law makes one it is so good I can eat a whole jar when I open it, but it is a mix of sweet nad hot and not alot of people like that mix, but if you want to try ti let me know I will get the recipe.

I can salsa just about every year. I have a basic recipe I follow, but I make mine up acording to taste. If you are interested I can send it to you. the recipe I came up with when I was trying to come up with my moms recipe. I usually don't follow the recipe exactly. mom doesn't have any recipe either she just goes by taste.

I have never tried to can my recipe, but here is how I usually make my salsa:

Chop following ingredients:
1 Large tomato
1 peach or nectarine
2 or 3 tomatillos
1 (finely chopped) jalapeņo pepper (use more or less to taste)
1/2 red onion or vidalia onion

sprinkle with lime juice and let sit in refrigerator for at least an hour for flavors to blend.

I have a great recipe that I just recieved from a friend. I've made it and my dh loves it. It also has good freezing directions for large batches, and a few options for different flavoring...If you'd like it, let me know.

Ok, I guess you can decide how you want to incorporate your tomatoes that you are going to use..meaning, freeze them seperately to use for this or other uses, or make up the whole recipe to freeze...I'm not sure. I just use the canned ones, so have fun experimenting.

I have a bunch of tomatoes that are from a garden and I plan to freeze them in different ways to make it flexible for different uses like this recipe I am going to have some diced, then I'll strain some and make tomato sauce, and then have some sliced to freeze.


Here is the recipe. Since I'm writing it down for you, I'll use measurements, but when I actually make it I just kinda eyeball it. So just do what you want and make it your own!

Ingredients:

1 can Rotel (or any brand of tomatoes, chilis, and onion mixture)
1 tsp cumin
1 tsp salt
1 garlic clove, minced (or 1 tsp garlic powder)
1/2 tsp sugar
chopped fresh jalapeno or a few slices of jarred jalapeno
Chopped cilantro, about a handful
1/2 onion, chopped (or onion powder if you don't have time for fresh)
1 large can of chopped tomotoes, drained (or you can use whole tomatoes which are supposedly the best tomatoes of the crop)

OPTIONAL:
* lime juice- about half a fresh lime
* can of fire roasted tomatoes ( I used this in your salsa- you can buy it at Walmart. I think it's Muir brand- it's organic)

Put the rotel and all the spices, cilantro, and jalapenos in your blender and mix until well blended. Add the drained can of tomatoes and pulse until it's all mixed well, but still chunky and not pureed. That's it!

Just a note.... I make the base ingredients in large batches so that it's easy to make in the future. This way I use all the cilantro and don't waste any. I put together all the ingredients (x 4) except for the large can of tomatoes and puree it all, then I put it in 4 little baggies. When I want to make salsa, I just take out a baggie and pop it into the blender and add the tomatoes. Takes 2 minutes!
