Please feel free to move if you have to, I'm posting it here because it is SO Good that I want everyone to see it not just the people checking into the recipes for bread.
1 1/2 C warm water
1/4 tsp. dry active yeast
1 1/2 tsp. salt
3 Cups regular flour
In large bowl, soften yeast in water. Add flour and salt. Stir with wooden spoon. Dough will be sticky. Cover with plastic wrap and let sit at Least 8 hours, preferably 12-24 hours. After the time is up, uncover and punch down lightly. Gather dough and form gently into a ball with floured hands and board. Turn dough over on itself a few times. Cover board with plastic wrap and let rest 15 minutes. Then take dough and place on a very well floured clean kitchen towel. Put a little more flour over top of the dough to prevent it from sticking to towel. Wrap dough in towel and place another towel on top and place on countertop. Let it rise another 1-2 hours.
A half hour before the last rising time is up, preheat oven to 475 degrees (yes, 475 degrees). Place a dutch oven (I use an enamel Covered steel roasting pan) in the oven and let it heat along with the oven. When oven is ready, take the dutch oven or roaster and cover out of the oven. Use hot pads, take top off roaster and put dough inside roaster, put the top back on. Place in oven. Bake 475 for 30 minutes. Take top off roaster and bake an additional 15 minutes or so until the top is nice and browned.
Use a metal spatula to remove bread from roaster. Let cool on wire rack at least one hour before slicing.
