Ok ... here is the recipe!
Savory Stuffed Mushrooms
12 Large mushrooms (I usually buy 2 packs of the regular pre washed mushrooms at the grocery store and usually end up using both packs)
6 ounces of mild or hot sausage (I usually buy a package of the frozen pre-cooked breakfast sausage and just heat it in the microwave)
3 tablespoons seasoned bread cumbs
1/2 shredded mozzarella cheese, divided
1 - 2 cloves of garlic
2 teaspoons dried parsely
preheat oven to 375 degrees.
Grease a large baking sheet.
Remove and chop mushroom stems, reserving the caps.
Heat a medium skillet over medium-high heat; add sausage. Cook until browned and crumbly, about 5 minutes; drain. (I usually opmit this step and heat the frozen precooked breakfast sausage in the microwave. I put on paper towels and drain the excess oil)
(at this point I usually add mushroom stems & sausage to a chopper and chop it this way, but you could do them each by hand - chopping)
Stir chopped mushroom stems, bread crumbs and 1/4 cup of mozzarella into skillet with the sausage. I usually add some garlic (1 - 2 cloves chopped) as well a couple tablespoons of grated parmasen cheese!
Remove skillet from heat. Spoon sausage mixture into mushroom caps. Arrange stuffed mushrooms on prepared baking sheet. Top mushrooms with remaining mozzarella. Bake until stuffing is hot, about 15 minutes. Place on a serving platter and garinsh with parsley.
