1 lb. ground beef
1 lb. Velveeta, cut into chunks (can use reduced fat version)
1 can Rotel (DO NOT DRAIN)

Brown and drain ground beef; return to skillet. Add Velveeta and Rotel. Cook over medium-low heat until cheese is smooth and completely melted. (Do not allow to bubble; it will curdle the cheese.)

Serve with your favorite chips, or over corn chips, like nachos. smile.gif

I made this, but used the breakfast sausage that comes in the roll. It is also very yummy!

I like to call this Texas Queso. I think its how everyone in Texas makes queso. For parties or get-togethers you can make this in a crock pot!
