Had this yummy recipe at a friend's party last week:

I sometimes do some extra lime just prior to serving as well. This is really easy to double and make 2 trays as well. If I double, I may do a green as well as a red pepper to really make it colorful (yellow corn, red pepper, green pepper, purple onion skins, etc.)

- - - - - - - - - -
1 can of Goya Black Bean Soup (red-ish can)
2 ears of corn
1 bell pepper (red, orange, green)
1/2 red onion
1 lime
cilantro
- - - - - - - - - -

pour bean soup in a big mixing bowl
cut the corn off of the corn ears with a knife and add to the bowl
chop up the pepper(s) and onion into little pieces and add to the bowl
stir up the bowl pretty good
cut lime(s) into halves and squeeze the living-daylights out of them over the bowl contents
(I would do a half, mix it all up, squeeze another half, etc.)
pour it all into a tray (like a disposable Glad 9 x 13 pan)
let it sit for a few hours or overnight in the fridge
garnish the top with lightly chopped up cilantro tops (just prior to serving/bringing somewhere)
