DH and I love ice cream sandwiches and this has been a great substitute for us.
Take 2 whole graham crackers (just like they come out of the box)
Spread fat free cool whip on one of them. Make a sandwich and freeze them.
We used the low fat crackers cause that is what we had on hand.
2 points! They are great!

the "no pudge" brownie mix is awesome. You make it with yogurt and there are directions for single servings that you make in the microwave. I think like 2 pts per brownie.
Also laughing cow cheese wedges only 1 pt. good on crackers.

I have ate the graham cracker cool whip thing and they are pretty good.
Speaking of laughing cow, here is one of my favorite recipes using it.
Laughing Cow Cheese Potatoes
30 ounces peeled potatoes, sliced thinly (9 points total)
1 medium onion, diced (0 points)
6 wedges Laughing Cow Cheese (7.2 points total)
1 1/2 cups reduced sodium chicken broth (0 points)
seasoned salt to taste
Put sliced potatoes and onion in a Pyrex dish that has been sprayed with Pam. Sprinkle with seasoned salt. Put chicken broth and Laughing Cow Cheese into blender and blend on high speed until smooth. Pout broth/cheese mixture over potatoes and onions. Bake in a 375 oven until done.
Serves: 3
Points: Total for whole casserole - 16.2
For one serving - 5.4
***I also add garlic powder and parsley to these when I make them.
Another favorite of mine is this.
Roasted Chickpeas
2 Cups Canned Chickpeas, drained
1/4 teaspoon Garlic Powder
1/8 teaspoon Cayenne Pepper
Salt to taste
Preheat oven to 375. Spray cookie sheet (with sides to prevent chickpeas from rolling off) with butter spray or olive oil spray.
Spread chickpeas on pan in a single layer and sprinkle with the remaining ingredients. Bake 50-60 minutes until golden and crispy, shaking the pan every 15 minutes to prevent scorching. If the chickpeas aren't crispy enough for you, simply bake them a little longer. If they're starting to get too brown, turn the temperature down a little.
Allow to cool completely before storing.
Serves: 4 (1/3 Cup Each)
2 points per serving.
**I also spray mine with a little of the olive oil flavored spray.

MANICOTTI
4pts. for two
6 manicotti shells
14.5 oz can of quartered artichoke hearts in water
1/4 c. part skim ricotta cheese
parmesan cheese
salt
pepper
1 c. fat free marinara sauce
1/4 c. part skim mozzerella cheese
boil manicotti tube according to package, set aside on tin foil
preheat oven 350. Spray shallow baking dish with nonstick spray. In blender or food processor blend artichoke, ricotta, parmesan, salt, pepper until smooth. fill each tube. Sread 1/2 marinara in bottom of dish. Add manicottitop with remainder of marinara and mozzerella. Cover with foil &bake until cheese bubbles aprox. 15 min.
*My husband prefers this to regular manicotti

Yep, that one is an oldie but a goodie. I think that was one of the first WW recipes I tried.
If you like ice cream, try Skinny Cow if you have not yet. They are AWESOME and are two points a piece.
I have a TON of WW recipes, but this one is a family favorite and incredibly easy.
Chicken and Dumplings
1 can fat free cream of chicken soup
3 cans water
chicken cooked (I use canned chicken breast to make it easy)
4 fat free flour tortillas - cut into strips
Bring soup and water to a boil. Add chicken and tortillas - turn to simmer about 30 minutes a little longer if doubling.
1 cup = 3 points
I also add a box of mixed veggies to it which won't up the point value and will get extra veggies in the meal.

ok, i went to a ww meeting last night and there were a few people who swear by this meal: yogurt (any flavor), 1/2 cup cottage cheese, and 1/3 cup Fiber One (cereal). mix together and it supposedly tastes really good. 3 points.
it sounds pretty nasty to me but i'm going to try it.

Blech! Sounds pretty nasty to me, too. Don't think I will try that one. I will let you be the guinea pig!

ok. the cottage cheese, yogurt, fiber one thing was DISGUSTING! I was gagging through about 3 spoonfuls and then I threw it away.
Any other suggestions?

Have you tried those all bran bars? They are yummy and they have 5 grams of fiber each and are only 2 points. I eat them for breakfast almost every day. If you imagine really really hard they taste like rice krispy treats. Get the ones in the yellow box - they are the best. The ones with raisins in them aren't very good.
I always start my day out so well and go downhill by dinner. By 6 pm I am exhausted and trying to cook dinner for 2 starving boys and one starving husband. It is such a stressful time of day here. I need some dinner ideas. I cook really healthy stuff but I lose interest in counting my points by that time of day. I need a plan so I don't just blow it off and eat without counting. I can't stand the WW boxes. Anyone have any good quick, easy, cold dinners that are low in points? It is 101 here today. Too #### hot to cook.
