Mix:
6 cups all-purpose flour
3 Tbsp baking powder
2 tsp baking soda
2 tsp salt
-Stir together all ingredients in a large bowl; store in a ziploc bag for up to 6 weeks.

Basic Pancakes:
1 1/2 cups pancake mix
1 Tbsp sugar
1 1/2 cups buttermilk
1 large egg, lightly beaten
1 Tbsp vegetable oil
Combine pancake mix and sugar in a medium bowl. Whisk together 1 1/2 cups buttermik, egg, and oil; add to dry ingredients, whisking just until lumps disappear. Pour about 1/4 cup batter for each pancake onto a hot, lightly greased griddle or nonstick skillet. Cook pancakes 2 minutes or until tops are covered with bubbles and edges begin to look cooked; turn and cook 2 more minutes or until done.
**Banana-Pecan Pancakes: Stir 1 chopped banana and 1/4 cup toasted chopped pecans into batter; proceed as directed.***

I am sure that one is great too, but here is another option I double the recipe and flash freeze. Taking out ones I need when we have them throw in toaster done! I also DO add the drop of real of maple syrup maybe thats the secret but my whole family said best pancakes EVER, and I used to buy Krustez!

This is the recipe I use it's from hillbillyhousewife.com
*I add either maple syrup or vanilla too.
Pancakes

1 cup milk
* 1 medium egg
* 1 tablespoon oil
* 2 tablespoons sugar
* 1/2 teaspoon salt
* 1 1/2 teaspoons baking powder
* 1 1/2 cups flour

Get out a medium sized bowl. Measure in the milk, egg, oil and sugar. Beat well with a fork or wire whisk. Add the salt, baking powder and flour. Beat again, mixing until the batter is smooth. Cook on a hot, well oiled griddle or skillet. I use about 1/4 cup of batter per pancake. I heat up my iron skillet over medium-high heat, and melt a spoonful of margarine or bacon grease in it. When the fat is almost smoking, I drop in about 1/4 cup of batter. Sometimes I cook two at a time, in the same pan. The pancake will settle down and cook. As it cooks, little bubbles will form around the edges of the pancake. The top will begin to dry out a little too. When the top is beginning to dry out, and the surface has plenty of bubbles on it, turn the pancake and cook the other side. Brown it well, and lay it in a plate. Repeat until all of the batter is used up. I usually cook double this recipe on Saturday mornings.
