These are great in the summer w/fresh berries!!

4 eggs -- separated
1/4 c sugar
1/2 tsp salt
1 c milk
1 Tbs fresh lemon juice
grated peel of 1 entire lemon
1/4 c melted butter
1 and 1/4 c flour
1/2 tsp baking powder

Beat egg yolks w/the sugar and salt.
Blend in the milk, lemon juice, lemon peel, and butter, beating well.
Add the flour and baking powder.
Beat egg whites until stiff and fold into batter.
Cook as usual
