Spread pie filling over sugar mixture.
Layer bread slices on top of the filling, pressing down as you go.
Beat eggs with milk and vanilla and slowly pour over the bread, making sure it's completely absorbed.
Cover pan with aluminum foil and refrigerate overnight.
In the morning, preheat oven to 350.
Place covered pan into oven and bake 60 to 75 minutes. (lift foil and check to make sure it's looking set)
When done remove from oven and turn on broiler.
Remove foil, drizzle maple syrup on top, broil for 2 minutes, or til the syrup begins to caramelize.
Remove from the oven and let stand for 10 minutes, then cut into squares. Invert the pan onto a serving tray or baking sheet so the pie filling is on top.
