I got this recipe from my mom who has been making it for 30 plus years.

One package of breakfast sausage ( I have always used Jimmy Dean)
2 slices of bread
8 oz. of shredded cheddar cheese
6 eggs
1 cup of milk
or
Cook and crumble sausage. Drain grease. Put in bottom of 8X8 or 9X9 baking dish. Crumble bread on top. Beat eggs and milk together. Pour over sausage and bread. Sprinkle cheese on top. Bake covered with foil at 350* for 45 minutes or one hour until firm. Take off foil last 5-10 minutes so top gets browned.

**You can prepare this the night before and let it set in the frige. covered with foil. Just toss in the oven in the morning.

My dh is on a low carb diet, and he is going to try this withOUT the bread and with low carb milk substituted. I'll let you know how it works! He was excited to try something a bit different.

It is a really good recipe. Best thing is, you can throw it together tonight and cook it in the morning. Yes, let me know how it turns out. I have never cooked with low carb milk substituted.

I logged on this morning on a mission to find something to make for brunch - I saw this and tried it. I have to say it was delish!!

I also made a vegetarian one for my son using his veggie sausage - he loved it!
