I got this recipe out of American Profile-it is some paper that comes inside our Thursday paper. It sometimes has good recipes in it, and I thought this one looked yummy. I HAVE NOT made this recipe yet. But was asked to post it-I posted a question about the whole wheat flour. If anyone makes it let me know if they are good. Thanks. I have made these twice for the kids and they loved them. My five year old says that they are better than the eggo waffles-the ones with the syrup baked in them. :happy dance:

MIX:

4 cups old fashioned oats
2 cups all purpose flour
2 cups whole wheat flour
1 cup packed brown sugar
1 cup instant non fat dry milk
3 tablespoons baking powder
2 tablespoons cinnamon
5 teaspoons salt
1/2 teaspoon cream of tartar

PANCAKES:

2 eggs
1/3 cup canola oil
2 cups pancake mix
1 cup water

Directions:

Mix all ingredients together well. Store in a sealed gallon size plastic bag or airtight container. Yield: 10 cups of pancake mix.
To make pancakes: beat eggs in a large bowl. Gradually beat in oil. Alternately add pancake mix and water to mixture. Blend well. Preheat and oil griddle. Pour 1/3 cup of batter per pancake. Cook until bubbles form around the edges, turn and continue to cook until done. Yield: about 10 pancakes

Take a look at all the recipes on the breakfast forum. There are some great recipes that I am wanting to try myself.

These pancakes are very yummy. My hubby loved putting pb and honey on them. Thanks for the recipe.

Great! I am so happy to hear that your family liked them. I am actually making these tomorrow for breakfast. My kids all like these better than the homemade blueberry pancakes I slaved over last weekend! But that is ok, these are very healthy and they have no clue.

3boysmommy-This one is for you. It does also call for regular white flour, but it may work if you want all of it to be whole wheat flour. Good luck!
