Thumbs up Quiche Cups (great for dieters)

3/4 c egg substitute
1 (10oz)frozen chopped spinach
3/4 c shredded reduced-fat cheese
1/4 c diced red peppers or green peppers
1/4 c diced onions
Tabasco sauce

Heat oven to 350.
Line a 12 cup muffin pan with foil baking cups, spray the cups with cooking spray.
Thaw and drain spinach, wring it out well by hand.
Mix the spinach, egg whites or substitute, cheese, peppers, onions, hot pepper sauce and salt in a bowl.
Fill the foil cups with the mixture.
Bake 20 min,test /knife-should come out clean.

Since you are the recipe goddess around here, I thought you'd be the best person to ask. A while back I saw a recipe in a magazine for breakfast quiche cups that started with lining each muffin cup with a piece of ham and then filling each with egg and cheese -- so that the meat was actually the crust. I think I must have tossed the magazine because I can't find the recipe anywhere. Do you a recipe for this or have you heard of such a thing? Thanks to you or to anyone that can help a hopeless cook like me.

oh those are easy....you can use ham or even bacon.......just line the muffin tin w/ham fill with your egg mix and bake at 350 about 20 min...just check your egg mix w/toothpick.

you can also crack a reg egg into it and top w/cheese for kids.You can scramble the egg or leave it unscrambled like a poached type thing.

p.s.

noones hopeless.....just "in training"hahahaha...

Thanks so much for the help and for not making me feel clueless.

So if I make the cups with bacon, its the raw bacon, not the cooked bacon, that I put in the cup, right? (I'm sure at this point my questions have had you knocking your head on the countertop. )

yup..raw just spiral it around the outside of the muffin cup.

No head bashing here yet either...

I try to also leave some wrapped high...the higher up you can get it the crispier the top will be.

How much hot sauce and salt should go in? Those ingredients are listed but no quantitiy.

hot sauce and salt is "too taste"....you can leave them out entirely(for example...folks on low salt diets"...hot sauce....you can start at about 1 tsp and go up depending on the "heat"ya like.(you can also leave completely out for kids)
