Breakfast Cookies

1 1/2 sticks butter, softened
1 cup firmly packed dark brown sugar
1/2 cup turbinado sugar or sugar in the raw
3 eggs
1 tsp vanilla
1 1/2 cups white wheat flour ( I use King Arthur brand)
1/2 cup flax meal
1/2 cup wheat germ
1 tsp baking soda
1 tsp cinnamon
1/4 tsp allspice
1/2 tsp salt
3 cups rolled oats
1 cup goldens and cherries

Preheat oven to 350. Combine all dry ingredients except oats and fruit in a bowl and set aside. Beat butter and sugars till creamy. Add eggs and vanilla, beating well. Add the flour mixture, incorporating well. Mix in oats and fruit. Drop by large spoonfuls onto an ungreased cookie sheet and bake for 10 to 14 minutes depending on size of cookies and your oven. Cool for 3 minutes on pan and transfer to cooling rack. My kids love these for breakfast with a glass of milk and they are full of fiber, nutrients and Omega-3's. So much better than Poptarts!

They do sound good. How big do you make yours and how many cookies does it make per batch? Have you ever put them in the freezer? Thanks for the info.

I make them giant heaping tablespoon sized and get between 20 and 24. The hard part is keeping the family out of them while I'm baking. I have frozen the dough sucessfully, but I haven't tried freezing the actual cookies. Should you try, let me know how it goes.

Goldens are golden raisins, they are sold by Sunmaid together and call them Goldens and Cherries. I would say you could use Splenda, but I have never tried it myself.

My family just loved this recipe. I could not keep them out of them. They were a little sweet for us (that is because we have cut sugar pretty much out of our diet), so I plan on playing with cutting the sugar back. The great part is, my kids did not know all the health benefits. I used only golden raisins which I got cheap at aldis. Thanks for the recipe.

Do you think ground quinoa would work instead of the ground flax?

I have flax seed that I use to make multigrain bread. Could I just put some of the flax seed in the food processor and grind it up to make flax meal?

These sound really good, I can't wait to try them.

Question: I used to buy ground flax seed at Costco because it was a great value. They don't seem to carry it anymore. I looked at my local grocery store in the organics aisle and just about fainted when I saw the price for the tiny little bag. Anyone have any suggestions for stores that sell ground flax seed at a reasonable price?
