another seasonal fave for December!!!This is great cause it only makes 6 jumbo muffins.




1 egg
1/4 c applesauce
3 Tbs vegetable oil
1/4 c molasses
1/2 c sugar
1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1 1.2 tsp cinnamon
1/2 tsp cloves
1/4 tsp ginger
1/4 tsp nutmeg
1/2 c boiling water
sugar

Preheat oven to 350.
Grease 6 jumbo tins.

Beat the egg, applesauce, oil, molasses and 1/2 c sugar.

Mix dry ingred and add to wet mixture.

Stir in the water, mixing well.

Fill the muffin cups two-thirds full.

Lightly sprinkle with sugar.

Bake 17 to 25 min,til done. (these are best if you let sit wrapped well overnight)

You dont HAVE to add sugar to the top but if you do(about 3/4-1 tsp on each it gets a pretty crackly top )
