that actually tastes good. I haven't found one that my family actually will eat. We are so used to the boxes ones, but we are cutting out the trans fats. that means no more boed pancake mix.

TIA!

Well, I think this one tastes good, but that's because I grew up eating them !!

Buttermilk Pancakes

1 cup buttermilk (low or no fat)
2 tablespoons honey
2 tablespoons oil
2 egg whites
1 teaspoon baking soda
2 teaspoons baking powder
1 cup whole wheat flour
1/2 cup wheat bran (optional)

Mix everything together well. Add a little more buttermilk if you think it's too thick (especially if you add the wheat bran). The recipe will work for pancakes or waffles.

I have a recipe here that is for pancakes and calls for whole wheat flour. I will bump it for you.

I think Mrs Butterworth (one of the boxed mixes) makes a Whole Wheat pancake mix and it is actually good.

I just posted this in another area but I'll put it here too. I'm not sure of the taste as I have yet to make them. At the end of the recipe it states this recipe works well with whole wheat flour also. HTH

fluffy eggless pancakes

1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 cup whole milk
1 tablespoon vegetable oil
1 tablespoon water
1 teaspoon vanilla extract
2 tablespoons butter

Combine dry ingredients and mix slightly.
Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.
Return pan to stove and stir butter into batter.
When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.
