Default Egg-less waffles or pancake recipes?

I don't have any recips, but I have bought the Aunt Jemima pancake mix, all you add is water. It was pretty good too! I try to keep some on hand in case I run out of eggs/milk. And you can use muffin mix for pancakes/waffles.

I think that I got this recipe from hillbillyhousewife but on a quick search on the site I couldn't find the link. If you don't have soy flour or dried egg it won't help you though. I bought soy flour to try this recipe but I haven't tried it yet.

Whole Wheat Pancakes
• 1 1/2 cups whole wheat flour
• 2 tablespoons soy flour or 1 tablespoon dried egg
• 1/2 teaspoon salt
• 1 tablespoon sugar (optional)
• 1/3 cup instant dry milk powder or 1/4 cup powdered buttermilk
• 1-1/2 teaspoons baking powder
• 1 tablespoon oil
• 1-1/4 cups water
• Shortening or Oil for frying

There are quite a few pancake mixes you can buy that add only water or milk.

I don't have any homemade ones ~ but I do have this Banana Bread recipe. This is the only one I have used forever! My step-sister has an egg/milk allergy so this is what we always made growing up.

Banana Bread

2 C flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2/3 C sugar
1/3 C Margarine
1 C mashed bananas

Mix sugar, margarine and bananas together. Slowly add rest of ingredients. Pour into a loaf pan and bake at 350* for 50 minutes.

If it's a concern because of an egg allergy, be careful with the pancake mixes that only call for adding milk or water. If you check the ingredient list it is made with dried egg whites or egg is already added to the mix, you just don't have to add it to mix it up. My ds is allergic to eggs and I've tried looking for a mix and can't find on truly egg-free.

You can buy a bag of egg replacement (I forget the name of it but I did see it in the organic section of my grocery store for $10, I haven't tried it yet though).

There is a frozen brand of waffles that is egg free, dairy free and gluten free. Of course I can't think of the name of that right now either, my ds didn't like them though.

Ok, I just searched and found this for fluffy eggless pancakes:

1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 cup whole milk
1 tablespoon vegetable oil
1 tablespoon water
1 teaspoon vanilla extract
2 tablespoons butter

Combine dry ingredients and mix slightly.
Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.
Return pan to stove and stir butter into batter.
When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.
Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.
Some reviews said it called for too much cinnamon so you may want to adjust that. I'm going to have to try this recipe!

Thanks for the recipe! We'll try it out this week!

I went through boxes of pancake mix at the store trying to find one that didn't include egg. I found one that was more expensive, but willing to try. When I got home and was putting the box away, I realized you have to add egg to the mix. Duh!! Oh well, it will still get used.

Use it - just substitute 1 tablespoon oil for the egg. The yolk of the egg adds fat, which gives elasticity to the batter so it can expand and hold its shape - oil will do the same. DH is allergic to yolks and I have made pancakes with egg whites & a smidge of oil, and there have been times I dont' have any eggs at all, so I just use straight oil. I've actually found that the pancakes I've made like this are a lot fluffier than when I used to make them with regular eggs.
