1/3 c vegetable oil
1/2 c honey (or you can 1/4 honey and 1/4 brown sugar)
1 tsp vanilla extract
2 eggs
1 c mashed bananas(I usually use 3 which is prob a bit more)
1 3/4 c whole wheat flour
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp cinnamon(or pumpkin or apple pie spice works great to)
1/4 c hot water
1/2 c chopped walnuts or pecans


Preheat oven to 325.
Beat oil and honey together,mix in eggs.
Stir in bananas and vanilla.
Stir in flour,salt and cinnamon.
Add baking soda to hot water, stir to mix,then add to batter.
Blend in chopped nuts.
Pour into greased 9x5 inch loaf pan.
Bake for 55 to 60 min.
Cool on wire rack at leat half an hour before slicing.

You can always sub applesauce for oil...but that also always takes away a little moisture-this recipe really is ok either way though.

And,personally,although very hard to do,I think most quick breads are better if you cool wrap in platic and let sit overnight(good luck with that though )
