I needed to use up some leftovers & came up with this delish sauce... SO GOOD!
Chicken & Bacon Cheese Sauce
3/4 cup (approx) leftover chopped/shredded chicken
6-8 slices cooked bacon, crumbled
1/2 tsp garlic poweder (or to taste)
1/4 tsp black pepper (or to taste)
Cheddar cheese sauce
3 TB butter
3 TB flour
2 C milk
2 C shredded cheese
Make cheese sauce. melt butter in pan, remove from heat & whisk in flour til smooth. add about 1/2 C milk & whisk in til smooth then add remaining milk and return to stove at medium high heat. Continue to whisk until comes to boil. turn heat to low & simmer for 5-10 minutes. Add shredded cheese, stir til smooth. add in the chicken, bacon, garlic powder & pepper.
Can be used the following ways:
Top baked potatoes
Mix with egg noodles & top with tomatoes (can also add corn or any other frozen veggie- add to the noodle water while boiling)
Mix with rice & broccoli & bake as a casserole
We had it with the egg noodles on the first night & had enough to generously top two very large baked potatoes the next day! It is so yummy & very filling! We each had a baked potato with sauce & broccoli & we were stuffed! Oh, and there was enough noodles l/o for DH to take for lunch! Have not tried the casserole but thought it sounded like a good idea. I thought it tasted the best on the baked potatoes! I sprinkled extra cheese on top too. heaven!
