Mexican Lasagna



Ingredients:

2 lbs. ground beef

1 pkg. taco seasoning

1 c. water

1 (8 oz.) can tomato sauce

1 egg

2 c. sour cream

8 oz. grated cheddar cheese

8 oz. grated Monterey Jack cheese

1 can refried beans

10 (8-inch) flour tortillas

Salsa (optional)



Directions:

Brown meat. Drain. Add seasoning and water & simmer 5 minutes. Add tomato sauce. Simmer 5 minutes or until slightly thickened. Mix egg with sour cream. Spread small amount of sour cream mixture on bottom of 9 x 13 pan. Place 5 tortillas on bottom of pan. Put up an inch on sides. Spread ½ can of beans on tortillas, then ½ meat mixture, then ½ sour cream, then ½ cheese. Repeat layers. Put a little salsa on top and/or chili peppers. Bake at 350 degrees for 30 minutes.

That does sound good, I too make mexican lasagna at our house. I make mine a little differnent.

1 lb hamburger
1 pkt taco seasoning
2 cans of corn
2 cans of black beans
shredded cheese
2 cans diced tomatoes (or 1 can rotel, 1 can diced tomatoes)
tortilla shells.

Just layer it all up after cooking the hamburger and adding the seasoning. Make sure to put a layer of tomatoes on the bottom(so the tortillas don't stick) & top with remaining cheese. Mmmmmm!

You can bake in the oven OR the crockpot until cheese is melted.
