Squash Casserole
1.5 lb of yellow squash, cooked in water until just tender and drained.
margarine
salt & pepper
1 lg onion, chopped
1 small can chopped pimentos
2 large carrots, finely shredded
1 can of cream of chicken soup
1 cup of sour cream
1 pkg of peppridge farm original stuffing mix
preheat oven to 350
Line baking dish with margarine. Season squash with salt and pepper. Mix everything together except enough stuffing mix to sprinkle on top. Pour into baking dish. Top with remaining stuffing mix. Bake for 35 minutes.
