Cheesy Beef Spirals
2 cups uncooked spiral pasta
2 pounds ground beef
1 garlic clove, minced
1 jar (26 ounces) spaghetti sauce
1 jar (4 1/2 ounces) sliced mushrooms, drained
1/2 cup sour cream
1/2 pound process American cheese, cubed (such as Velveeta)
2 cups (8 ounces) shredded mozarella cheese
Cook pasta according to package directions. Meanwhile, in a large saucepan, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and mushrooms; bring to a boil. Reduce heat; cover and simmer 20 minutes.
Place half cup meat sauce in greased container (2 1/2 qt size). Drain pasta; place half over sauce. Top with half the remaining meat sauce; spread with sour cream. Top with American cheese and remaining pasta and meat sauce. Sprinkle with mozzarella cheese. Freeze or cover and bake at 350* for 25-30 minutes. Uncover and bake 5-10 minutes, or until bubbly. If freezing, defrost in refrigerator overnight before cooking. Bake coverd at 350* for 45 minutes. Uncover and bake 5-10 minutes, or until bubbly.
