Cheesy Bacon Spanish Rice

I'm putting this under main dishes cause that's how we eat it - I usually serve it with homemade tortillas. Since I serve this as a main dish, I add 1 can drained corn and a small drained can of sliced olives. Also, I have substituted brown rice with no problem.
4 slices bacon
1 c. onion, chopped
1/2 c. green pepper, diced
1 16 ounce can diced tomatoes
water (about 1 1/3 c)
1 8 ounce can tomato sauce
1 t. salt
1 1/2 c. long grain rice, uncooked
1/2 c. cheddar cheese
Fry bacon until crispy. Remove from pan, drain and crumble into pieces. Preheat oven to 350 degrees. In bacon droppings, cook onion and green peper until tender. Drain tomatoes, reserving liquid. Add enough water to the liquid to make 1 3/4 c. Add liquid, tomatoes, tomato sauce and salt to onion mixture. Heat to boiling. Stir in rice. Remove from heat and pour into grease 1 1/2 quart casserole. Cover and bake at 350 degrees for 35 minutes or until rice is tender and liquid is absorbed. Fluff rice with fork; sprinkle with cheese and bake 5 minutes more. Garnish with bacon.
