1 Lg sweet potato, thinl sliced
1 Lg potato, thin sliced
1 onion, thin sliced
4 Tbs butter, divided
salt and pepper to taste
2 Tbs flour
1/2 c vegetable broth
1/4 c heavy cream
1 1/2 c shredded mozzarella cheese
1 Tbs parsley

Preheat oven to 350.
Grease a 9x13 inch baking dish.

In baking dish, make a layer of sweet potato slices.
Then add a few onion slices on top, dot with butter, and sprinkle with salt and pepper. Repeat,layers of white and sweet potatoes. And somewhere in the middle add a layer of 1 c of the cheese.

Mix flour,cream,and broth. Pour over potatoes.
Sprinkle rest of cheese and parsley over the potatoes. Dot with rest of butter. Cover and bake 1 hour,til potatoes and onions are soft.(I usually cook 1 hour and then 10-15 uncovered)
