Default White Enchilada Casserole

sooo good!

4 chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
1 (8oz)can diced green chilies
1 (10oz)grated cheddar cheese
1 small onion, diced (you can also use green which is what I like)
2 Tbs oregano
1 Tbs garlic powder
1 tsp salt
12 corn tortillas
16 oz sour cream


Boil chicken in water(to cover)and add in oregano,garlic powder and salt and shred meat.
Save broth.
Mix soups, sour cream & chiles in large pan.
Add only enough broth to slightly thin.
Re-season as needed.
Simmer on low 15 min.
Add chicken and diced onion.
In casserole dish, arrange 6 Tortillas flat across bottom, spoon in 1/2 the sauce, sprinkle 1/2 the cheese.
Repeat- Tortillas, sauce and cheese.
Bake 350 for 20-30 min.

I haved used a recipe like this several times. It varies, depending on what I have on hand, but it is always yummy. And it will still work well with ground beef if that is what you have. I believe I may have even used leftover pork before. The diced green chilis make it so yummy!

I also wanted to add, that even though I have made it like this, I usually roll the meat in the tortillas and add the sauce on top and sprinkle with cheese. Either way. It is yummy.

I just made this for dinner and it was so good. I think that for my family size it made more than what was needed. I used a pie pan and ended up with a lot of filling left over. But I grabbed a bag of tortilla chips and found that it is a yummy dip. I froze what was left and can use it as a dip some night we have so other kind of mexican. I think that next time I will make an extra pie pan and freeze it. Thanks so much
