Franks & Beans Casserole

2T extra virgin olive oil
2 packages of all beef hot dogs sliced (or whatever dogs you like)
1 medium onion, chopped
1T chili powder
2T maple syrup
3T Worcestershire sauce
15oz can of tomato sauce (2 cups)
1 family size can of baked beans
PAM

*Cornbread:
1 ¼ c flour
¾ c corn meal
¼ c sugar
2t baking powder
1c milk
½ stick butter, melted
1 egg
2c cheddar cheese

Preheat oven to 400. Coat baking dish with PAM.
In large skillet over medium high heat, add EVOO.
Add sliced hot dogs and brown, 6-8 minutes.
Add chopped onion & cook 3-4 minutes.
In small bowl, combine chili powder, syrup, Worcestershire sauce & tomato sauce.
Add mixture to skillet. Add baked beans and bring up to a simmer.
While hot dog mixture is cooking, mix corn bread ingredients:
flour, corn meal, sugar, baking powder, milk, butter & egg.
Add cheese to cornbread mixture.
Pour hot dog mixture into baking dish.
Pour cornbread mixture over top hot dog mixture.
Bake about 20-25 minutes.
You may need to remove the dish and spread out the cornbread halfway through.
Serves 6-8.

*You can use a cornbread mix and put on top if you don't want to make your own.

Sounds like a good recipe that my children will actually EAT! :-) I don't have cornbread mix or corn meal... do you know if you can sub something else? Maybe Bisquick?

LOL! I hope I'm not too late. You don't need a topping. I would make the bisquick seperate if I were you. Then you don't have to worry about the top getting done. You can crumble the biscuits up and put it in the casserole when it comes out of the oven. I think I might make my cornbread seperate and crumble it in next time.

That sounds like a great alternative! Tonight we just had cheese toasties and green bean casserole. (quick and last minute...I was tired!) Tomorrow it's your meal. Thanks for the quick response!

Skimommy, thanks for this recipe! I spent all day deep-cleaning the house and the LAST thing I wanted to do was make dinner. I remembered your recipe and fixed it in no time flat! The only difference was that I ripped up some biscuit dough and tossed that on top of the casserole. Easy and good! Thank you!

I'm glad you liked it!! Going without the homemade cornbread does make it faster... good variation with the biscuit dough.
