Ham/Noodle casserole

This is my DH's favorite but I only make it 1-2x a year as it's not exactly "light".
Schinken Flecherl (Ham Casserole) 350 oven; serves 6 unless it's us; then maybe 3-4...
2 T flour
2 T butter
2 cups sour cream (I use one regular, one light)
2 eggs, beaten
1/2 lb cooked ham, cubed
salt & pepper
2 cups dry egg noodles (I take a glass 2 cup measure and fill it to the top, so it's a bit more than 2 cups - as we are very greedy w/ this dish).
Parmesan cheese
In a large saucepan, combine the flour & butter, cook over medium heat, stirring into a smooth sauce. Do not brown. Take off heat/cool slightly. Stir in the sour cream, eggs, ham, salt & pepper. Fold the noodles into the mixture & then turn the whole thing into a 2 quart baking dish (sprayed w/ PAM). Bake at 350 for 25 minutes. Sprinkle w/ cheese. Bake 20 minutes more - serve hot.
My mom used to make this and we all loved it. When I asked for the recipe I was so shocked as it doesn't sound like it would be nearly as good as it is. Also good for a brunch.
