Layered Enchilada Casserole From: Saving Dinner
3/4 Lb extra lean ground beef 1 lb tomato sauce
1 cup oats 1 cup low fat sour cream
1 tsp Garlic powder 1 cup Ricotta cheese (part skim milk)
1 Cup chopped black olives 1 can diced green chilies
1 bag baked tortilla chips 1 cup low fat cheddar cheese

Preheat oven to 350F. In a skillet brown ground beef and drain. Add oats and stir well. Add garlic powder, olives, and tomato sauce. In a bowl combine sour cream, Ricotta cheese, and green chiles. Crush tortilla chips and place ½ of them on the bottom of a 2 quart casserole dish. Add ½ meat mixture and then ½ sour cream mixture and top with ½ the cheese. Repeat the layers. Bake uncovered for 30-40 minutes.
Serve with big salad or steamed broccoli.
