I just tried this last night and it was a hit with everyone.

Chicken Alfredo Rice Casserole

1 recipe alfredo sauce (below) or 1 jar from store
1/2 cup milk
2.5 cups white or wild rice, cooked (I used brown)
2 cups cubed cooked chicken
1 cup frozen peas or corn
1 cup soft bread crumbs
1 T butter, melted

Preheat oven to 350 degrees F. In large bowl, combine alfredo sauce and milk. Stir in rice, chicken, and veggies. Transfer to 1.5 quart baking dish.

Bake, covered, for 30 minutes. Uncover and stir. Combine bread crumbs and butter; sprinkle on top.

Bake, uncovered, for 20-25 minutes more until heated through and crumbs are golden brown.

Let stand five minutes before serving. Serves 4.


Alfredo Sauce
-8 oz cream cheese, cut in bits (I used the reduced fat kind)
-3/4 cup parmesan cheese, grated
-1/2 cup butter or margarine
-1/2 cup milk (I use skim or 1%)

In large sauce pan, combine cream cheese, parmesan, butter, and milk. Stir constantly until smooth over low to medium heat.
