I stopped eating meat a little over a month ago. I do the shopping and the cooking, so dinners just kind of went my way. There have been some discussions as to "why" I don't want to eat meat anymore, a couple small tiffs between dh and I over whether to tell the kids where meat comes from, but all in all, it's gone pretty smoothly.
Yesterday, I made a veggie meal and my little guy refused to even take a bite. The rest of us ate it and liked it and there were things that he liked and could have eaten, he was being a brat. I told him if he didn't at least taste it, he wasn't getting a snack. He didn't on both counts. He woke up starving and ate a pancake, an egg, two peices of raisin toast and two glasses of milk.
Right after, I went grocery shopping. When I got home, I asked the boys if they were hungry for lunch. My little guy ran up to me with the biggest grin I had ever seen and said, "Nope! Dad got the grill out and we're grillin' meat!" Okay, no problem. We sat down to dinner and I have never heard such quiet. They ate like they hadn't eaten for an entire month. My oldest even said, "Now this is more like it!" Then my youngest looked at my plate, with a veggie burger on it and asked, "Where does steak come from?" My dh said, "From a cow." "How does the cow get to be a steak?" Dh said, "You cook it." Then gives me the eye... and asked the boys to just enjoy their dinner and not ask so many questions.
After dinner, my dh said he was glad that I was cooking mostly veggie meals. He knows it's much healthier and he feels better since we've made the switch. My little guy just cracked me up though...I don't think there is any hope for him coming to my side on this one.

My son has been a vegetarian for about 3 yrs, he is 17. I love meat way too much to give it up entirely (sorry) but I gradually have been making some changes in my diet. Because of him I have substituted real meat for the "fake" meat he prefers in a few recipes. DH hates it but I don't mind the taste, its worth the reduction in calories and fat for me.

ok I'm laughing b/c you sound like that is alot! My kids eat 3 pancakes, 2 eggs, toast, fruit, yogurt and milk (each) on a regular saturday or sunday morning! Even Jenna scarfed down 2 eggs and yogurt this morning for breakfast. They eat more than me everyday and they are still skinny, drives me batty!
I'm glad they haven't been too difficult for you, I know how important the change was for you! You have been doing a good job with the meals for them if they haven't complained! My dh is a steak man, I've trying changing him slowly, I've got it down to one meatless dinner a night and some lunches meatless. (believe me that was difficult enough!)

I'm laughing too. I would love to go veggie but my 4yo in particular prides herself in being a "carn-vore". We do eat very little meat compared to the average American household but haven't taken the complete plunge. I've started using TVP for ground beef and the kids don't mind. DH sometimes gives me a look but... he's ok with it most of the time.

My son emails me stuff he finds online that validates his decsion to be a veg - here is what I got tonight
"Mom, If losing weight isnt enough reason to be vegetarian here are some other good reasons:
* Going Veg decreases personal annual greenhouse gas emissions by 1.5 tons.
* Going Veg protects rainforests and wetlands from conversion to feed cropland.
* Going Veg reduces pollution of waterways by animal waste and feed crop runoff.
* Going Veg conserves scarce water supplies, topsoil, fertilizer, and fossil fuel.
With every bite you take, you can reduce global warming, improve your health, and protect animals. Make a change for the better!"

He's right! Ya know, I knew all of that, but never concidered that I had done something good for the environment by going veggie. I only concidered the health and animal part of it. Ya me!

I have to double the recipe when I make pancakes, that is for DH and DS alone
I'll triple if the girls and I want to eat too.
No way my house would go veggie even if I wanted it to.
Trying to cook healthier because DH's cholesterol, found out he would hit the 24hr McD's on way home from dropping me off at work. He's snag a few burgers for DS and him- they thought they were getting away with it

I'm so glad my dh is supportive of the girls and I being vegetarian! I'm also happy he doesn't bring meat into the house very often. :hurl:
