I really need your help. I need to make a Mexican dessert for my son's kindergarted class. It needs to be something I can make a day ahead and cannot have nuts in it. Any suggestions?

There are mexican sugar cookies that have cinnamon sugar on top of them...let me see if I can find the specific name for them. They'd be easy to make.

Sorry...they are bisochitos - but they're NEW Mexico's state cookie. LOL!

Mexican desserts that I can think of are flan, churros, wedding cookies (have nuts), sopapillas...

I don't think this is specifically Mexican, but it is cheesecake with a Mexican twist (it's very easy to make and very yummy):

Sopapilla Cheesecake

Preheat oven: 350°

2 cans crescent rolls
3 (8-oz.) pkgs cream cheese (1 non-fat, 2 regular), softened
2 c. sugar, divided
1 ½ tsp. vanilla
1 tsp. cinnamon
1 stick real butter

Layer 1 can of rolls in the bottom of a 9 x 13 pan. In a bowl, mix the cream cheese and 1½ cups of sugar. Add the vanilla and mix well. Spread the mixture on top of the rolls. Layer the remaining can of rolls on top of the mixture. Pour melted butter over the top of the second layer of rolls. Mix the remaining ½ cup sugar and the cinnamon together and sprinkle over the top. Bake at 350° for 30 minutes.

You could make Flan, Tres Leches, Ros con leches. Sopillas are good!
Flan is a custard dessert
Tres Leches is cake made with three kinds of milks
Ros con leches is like rice pudding

Bunuelos are a good bet. they do taste best warm or at least same day fresh but they are good the next day, at least I hear they are. They never last more than 1 hr in my house. This is the closest recipe I could find. me and mom use cinnamom tea instead of warm water. the bottom link shows step by step but without the recipe. this is how we make them at my house. but we don't use the couch. I should also add that I don't let mine "dry" like the second link shows.
or the cheater way is to spray a flour tortilla with pam, sprinkle with sugar/cinnimom mix and bake. I have never done this so I don't know how well it really works but people tell me they are good. it would be easy to test. just say that the first link has a cheater version.

Flour tortillias sprayed with cooking spray or dipped in butter, with cinnamon sugar baked at 300 for a few minutes are GREAT!!

I think that would even be good for a class of Kindergarteners.
