Default Really need a good Chili recipe

We love chili and corn bread, I have tried several times to make it and it just doesn't turn out tastin like chili. Any good recipes?

I always buy a chili packet. They're 3 for $1 at the Dollar Tree.

1 lb meat
1 can of tomato sauce (the little cans) or diced tomatoes or something wet and tomatoey
1 whole onion (yellow or sweet) diced/cut up
1 can of kidney beans
1 packet of chili seasoning

crumble and brown meat, drain
put into a pot with all of the other items and let it cook for however long is directed on the packet.
I leave it on longer than that on low so all of the flavors sort of come together.

I also add cheese or sour cream (to taste) to it and mix it in for flavor.

1lb beef
small onion(chopped)
1 can tomatos
1 can chili beans
1 tsp beef bouliion
1/4 cup water
1/2 package of chili mix
1 Tbs of chili powder

Brown beef and onion together. Throw in the rest of ingredients. I simmer usually for 45min. to an hour. If its too liquidy towards the end I add a little corn meal.

Here is our favorite chili recipe

Ground beef, browned and drained
1 yellow onion, diced
1 red onion, diced
2 cans of diced tomatoes(we generally use rotel because we like spicy)
1 can of tomato sauce
1 can water
about 20 mediums mushrooms, chopped fine
chili seasoning( I use the mix at Kroger called Best Damn Chili seasoning or something like that)
1 tbsp of minced garlic

Put all in crockpot and cook on low all day.

I don't know about for a crock pot, but I love this recipe from Paula Deen for chilli (http://www.foodnetwork.com/food/reci...31376,00.html). I don't make the biscuit bowls, but the chilli is super easy (and I am not a geat cook either!)

I'm a vegetarian, and I don't use an actual chili recipe, just kind of throw things in and taste as I go. Usually I will put in....

a big can of crushed tomatoes (I don't like chunky tomatoes in chili...petit diced tomatoes are okay too)
a couple of different kinds of beans (black and red or kidney)
corn
rice or bulgar wheat (bulgar would give a more hamburger-like consistency, just be careful because both will absorb some of the liquid. It may be better to add cooked rice or bulgar, just depends on how soupy you want it), obviously you would add your hamburger in place if this if you chose to do that
onion
a little garlic
red/green pepper
jalapeno (with or without seeds)

and for spices, I just use lots of chili powder and cumin, also some coriander and oregano, and salt and pepper to taste.

You can also use a little bit of red wine vinegar or pickle juice, stirred in at the end.

I make this crockpot chili recipe. My husband loves it.

Brown and drain:
2 lbs ground beef

Combine beef and the remaining ingredients in crockpot:
1 1/2 packets Chili seasoning ( I like McCormick Tex-mex Chili seasoning)
2 large onions, chopped
4 cloves garlic, minced
1 15 oz can diced tomatoes
1 15 oz can tomato sauce
1 6 oz can tomato paste
1 15 oz can red kidney beans
1 1/2 cups water
1 cup salsa
1 12 oz can beer (the KEY ingredient!)
couple spashes hot sauce

Cook the ingredients on low 8 hrs and serve with shredded cheddar, sour cream, and tortilla chips.

Other optional ingredients you can add, depending on your tastes are sliced jalapenos or sliced black olives.

Enjoy!

I think it's hard sometimes to find good recipes because what is great to one person is not so great to others. I remember I belonged to this cooking site, way back when and every single recipe I tried, we thought was horrible. LOL And then folks were raving about how great they were...LOL. Oh well! Vive la Différence!

This is my chili recipe...

CHILI

3lb Chili Ground Chuck
2 T Chili Powder *
1 t Garlic Powder
1 t Ground Cumin
1 t Oregano
1 t Paprika
1 T Salt
1 t Crushed Red Pepper
2 15oz Cans Stewed Tomatoes
2 150z Cans Tomato Sauce
3 Med Onions (chopped)
4 t Tobasco Sauce *
1/2 11oz Jar Jalapeno Peppers (diced) with all the liquid *
1 C Water

Brown the ground beef in a skillet until it's just lost its pink color. Drain off the fat and set aside.

In a large pot, saute the onions in a little bit of oil, until they are transluscent. Add all the remaining ingredients except the water and meat.

Bring to a boil and boil for two minutes. Add the browned meat and reduce the heat and simmer covered for about two hours. Add the water as needed to maintain desired consistency.

Red kidney beans can be added at the end if desired. I don't add them before the end because I find they break up and change the consistency of the chili. Usually I heat them on the side and add the bean individually to bowls as I serve the chili. You can freeze the chili in portions (which is what I do).


* You can adjust these ingredients depending on how much heat you like in your chili...
