This is so good!We just loved it so much.

1 can of mushrooms drained
small can of black olives,Drained(I left this out)
1 Small Jar of Artichokes,Undrained
1 Can of Diced Tomatoes W/Juices
3 T. Quick cook (minute kind in the red box) Tapioca
2 Boneless Chicken Breasts cut into strips
2 T. Italian Seasoning
1/2 t. Salt
1 Cup Chicken Broth(I used Water & Chicken Bouillon Paste)

1~In CrockPot Combine Mushrooms,Olives,Artichokes,Tomatoes & Tapioca

2~Place Chicken on top of Veggies.Sprinkle with Italian Seasoning & Salt.

3~Pour Chicken Broth Over Chicken.

4~Cook on high 3.5-4 Hours on High.I stired it Half way through.

5~Serve Over Cooked Fettuchini,Sprinkle with Feta Cheese.I liked it with the Feta Cheese but Mozzarella or Parmesan would work good too.Also I mixed in the half pound of cooked Fettuchini in the Crockpot and mixed it all up before serving it.

I will have to try this. Is the can of diced tomatoes the 14oz size or bigger size?

the 14.5 ounce can.I buy the walmart brand name.

I wanted to add it was the quick cook instant tapioca in the red box I used.
