Crockpot "Base"

Several years ago (and several boards) a girl posted this here. She doesn't post here anymore, but this recipe was really worth keeping around! (I miss her, too!) Anyway, here it is.....
2 cups chicken broth
4-6 med potatoes (bite size pieces)
1 cup milk
2 cups cheddar cheese
Put the chicken broth and potatoes in on low for 4 hours. Take a mixer and beat/whip them until smooth. Add the milk as needed during the whipping. Add the cheddar cheese. For a smooth more creamy "base" add more milk. Heat until warm.
***Explanation***
You can use this as a base for MANY things.
To make a beer cheese soup, add 1 can of beer and heat until warm. I also add shredded carrot to make it more orange.
To make a super side dish, add 1 cup cooked rice and 2 or 3 of your favorite veggies. You might want to add extra milk so it is more soupy or has more sauce.
To make a ham and potato chowder, save some of the potatoes from whipping, so you have bite size pieces and add ham.
To make a veggie topping, add extra milk so it is very saucy and smooth, serve over cooked cabbage or asparagus, or veggie of your choice.
You can add most anything you want to it, use what you have in the house and it is a really good way to use you slow cooker for a lot of things.
