CP dishes to take to a picnic?

DH's family has a big all day picnic for 4th of July. Everyone always brings their dishes for lunch but then there's nothing left for supper. They just grill up burgers and eat whatever is left over. I'd like to make something that I could start in the CP in the morning and then it be ready for supper.
Ideas?
