This is from "Fresh from the Vegetarian Slow Cooker" by Robin Robertson. It's a really good recipe. I served it to my meat-eating dh and my IL's who all enjoyed it.

INGREDIENTS:

3 tbs olive oil
1 small yellow onion, chopped
1 medium-sized carrot, chopped
1/2 small red bell pepper, seeded and chopped
2 garlic cloves, minced
1 cup frozen corn kernels
3 cups slow cooked or 2 (15.5 oz) cans pinto beans, drained and rinsed
1 (4 oz) can chopped green chiles, drained
3/4 cup vegetable stock (I'm sure you could use chicken stock too, if you wanted to)
1 tbs tamari or other soy sauce (I always use Bragg Liquid Aminos because it's unfermented)
1 tbs minced fresh cilantro leaves (dried don't hold flavor well, so fresh is BEST)
salt and freshly ground black pepper
1 cup cornmeal
2 tsp baking powder
1/2 tsp baking soda
1/2 cup milk or soymilk

1. Heat 1 tbs of the oil in a skillet over med heat. Add the onion and carrot, cover and cook until softened, about 5 mins.

2. Transfer onion and carrot to a lightly oiled 3-1/2 to 4 quart slow cooker, and add the bell pepper, garlic, corn, pinto beans, and chiles. Stir in the stock, tamari, and cilantro, and season with salt and pepper. Cover and cook on low 5 hours.

3. About 1 hour before you're ready to serve, make the topping: In a large bowl, combine the cornmeal, baking powder, baking soda, and 1/2 tsp salt. Add the milk and remaining 2 tbs oil and stir to blend.

4. On a lightly floured work surface, roll out the dough to a 1/4-in thick circle, then carefully place crust on top of the cooking vegetables. turn the heat setting to HIGH, cover, and cook until the topping is cooked through, about 1 hour longer. For best taste results, serve the potpie within 10-15 mins after the crust is finished cooking.

As a side note, the dough ended up being too wet for me to roll out, so I just spooned it over the top of the potpie, and that was perfect, kind of rustic-looking! Good luck, and ENJOY!

This sounds good! My best friend is a vegetarian and I am always looking for recipes that I can make that my dh will also eat.

Thanks, this sounds really good. I can't wait to get "Fresh From..." from the library. I love chili and my guys go for anything with cornbread.
