Crock pot is,I think, about THE best way to do pork roast...here's one of my faves

1 large onion, sliced
2 1/2 pounds boneless pork loin roast
1 cup hot water
1/4 cup white sugar
3 tablespoons red wine vinegar
2 tablespoons soy sauce
1 tablespoon ketchup
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 dash or 2 hot pepper sauce, or to taste

Arrange onion slices evenly over the bottom of the slow cooker, and then place the roast on top of the onion. In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over roast.
Cover, and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.

Their is a photo in my gallery of this

Perfect timing! Pork roast was BOGO this week. DH is making Carne Adovada with one, but I didn't know what I was going to do with the other - thanks for the idea!

*bump*

I have no doubt that Trudy's recipe is awesome (I have her beef stroganoff in the crockpot right now actually! lol) but I wanted to add in the most recent crock pot pork roast recipe I made. forgive me for lack of measurements.. I'm awful at just throwing things together without paying attention for next time.

pork roast (I think I used about a 3-5 lb one?)
chunks of onions, celery and carrots
onion soup mix
french onion soup

toss veggies into crockpot, put pork roast on top. pour onion soup mix over roast and then pour french onion soup over all. cook until it falls apart this was SOOOOO AWESOME and I got many rave reviews from company we had that night (including a request for the recipe).

I regularaly make any pork ( chops or roast ) with Cream of celery ,and onion soup mix. It is so easy and OMG is it good. -

Your recipe sounds wonderful too trudy!
Only thing I don't have is the red wine vinegar.
Does it matter that much?? Can I increase something else instead?

I won't make it if I really need the Red wine. I will wait. but if you think it'll be ok , I am making this on Monday!!

My family LOVES porketta made in the crockpot:

1 boneless pork roast
salt and pepper to taste
1c. fresh dill
1 c. fresh parsley
2 tbsp sweet basil
1 1/2c. fresh fennel, chopped
1 can chicken broth
3 cloves chopped fresh garlic

The more greens you add the better, place everything in crock and cook all day until done and falling apart. It's great as a roast or sandwiches.
