Crock Pot Mashed Potatoes

5 pds red potatoes, cut into chunks
1 Tbs minced garlic
3 cubes chicken bouillon
1 (8oz) container sour cream
1 (8oz) package cream cheese, softened
1/4 tsp garlic powder
1/2 c butter
1/4 tsp salt and pepper
Boil the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water.
In a bowl, mash potatoes with sour cream and cream cheese,1/4 tsp garlic powder adding reserved water as needed get your consistency where ya want it.
Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.
(personally I like to saute finely diced red onion with the butter and add that)
