Crockpot Corned Beef & Cabbage
Serves: 8

6 medium carrots, cut into 1" pieces
2 onions, chopped
1 2-lb. corned beef brisket with seasoning packet
1 12-oz. can beer
water
8 thin wedges cabbage

In 4-6 quart crockpot, combine carrots and onions. Top with beef brisket and sprinkle with seasonings from packet. Pour beer over brisket and add enough water to crockpot to just cover brisket. Cover crockpot and cook on low setting for 10-12 hours.

Remove corned beef from crockpot and cover with foil to keep warm. Add cabbage wedges to vegetables and broth in crockpot. Cover crockpot and cook on high for additional 30 minutes or until cabbage is crisp
tender.

To serve, cut beef across grain into thin slices. Remove vegetables from slow cooker with slotted spoon and serve with beef. Serve cooking juices over servings.

Thank you! I just bought a corned beef brisket and was planning on doing it in the crock pot on St. Patrick's day!

My question is, can you 'soak' it ahead of time to get rid of the super salty taste before you cook it in the crock pot? I made one last year and it was SO SOOOO salty, I almost could not eat it (and I Love salt!) Maybe if I soak it overnight in water? Would that help?! Thanks!!
