Sticky Chicken

4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken
1 cup chopped onion

In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight. In the morning cut onions and place in the bottom of crockpot. Put it in the crockpot and do not add any liquid as liquid will be produced as it cooks. Cook on LOW for 8
to 10 hours. Do not open the lid till done!

I have made this and it is really good.I do a whole chicken in the crockpot and it is so moist.Best way I have had a roasted chicken in the crockpot before.

OOOOO!!! I want to try this recipe out this month. What do you serve with it?? Do the juices make a good gravy for mashed potatoes or is another side dish a better idea??? Thanks!

Funny thing is I posted this recipe and I don't remember EVER cooking it or even EVER tasting it. Wonder if I copied it from somewhere else as a favor to someone. Dang....memory problems are a PITA!
