This is a simple recipe for Beef Stew. I like it because once it is in the crockpot you forget about it. It is hearty and comforting at the same time. With this recipe I cheat by using pre-packaged beef stew seasoning mix. I do mix the seasonings myself as well but I am not sure of the measurements so I will figure them out and post that recipe later.
Beef Stew
2 lbs. stew meat (trimmed and cut into bite size cubes)
3 pkgs. beef stew mix
4 cups beef broth (homemade or canned is fine as well)
6 medium size potatoes (peeled and cubed)
4 large carrots (peeled and sliced)
3 tablespoons of oil
Directions
In a small bowl combine 4 cups of beef broth and 2 packages of beef stew seasoning. Stir until seasoning is disolved. Set aside.
While you are preparing your potatoes, carrots and meat preheat your crockpot on high.
Also, preheat a large skillet with the oil on the stove.
In a large bowl coat your meat with one package of your favorite beef stew seasoning. Stir around until all beef is well coated with seasoning. Once meat is well coated add to skillet and cook until meat is brown on all sides.
In preheated crockpot add potatoes, carrots and then the meat. Then pour beef broth mixture over top of potatoes, carrots and beef.
Put your lid on your crockpot and cook on low for 8-10 hours or on high for 4-6 hours. If you want to cook on low make sure you remember to turn the crockpot down to low from the preheating step.
About an hour before the stew is done if it appears to be to thick you can add more beef broth or water to thin it out. We love ours thick and chunky.
Note: I love to serve this meal with homemade sourdough bread.
