Default Creamy Chicken and Noodles

2 cups sliced carrots
1 1/2 cup chopped onion
1 cup sliced celery
2 tablespoons parsley
1 bay leaf
1 1/2 to 2 pounds chicken-cut into 1 inch chunks
2 (10 3/4 oz) cans of Cream of Chicken soup
1/2 cup water
1 teaspoon dried thyme, crushed
1/4 teaspoon pepper
10 oz uncooked egg noodles
1 cup frozen peas

In slow cooker place carrots, onions, celery, parsley and bay leaf. Place chicken on top of veggies. In large bowl, stir together soup, water, thyme and pepper. Pour over chicken and veggies. Cover and cook on low heat for 8-9 hours (high 4-5 hours). Remove bay leaf. Cook noodles and peas according to directions. Drain and add peas to crock pot. Drain noodles. Serve chicken mixture over noodles or mix noodles into crock pot, stir and serve.

I have not made this recipe for months. Think I will make it on Saturday since I have to work until 6. mmmm, cant wait.

Sounds yummy. Does it turn out differently than the chicken & noodle casserole? I make something similar in the oven.

Probably not. Only difference is cooking it in the oven vs a crock pot. I make it this way so that if it is a night I work late, all dh has to do is boil up some water for the noodles and dinner is ready.
Mind sharing your recipe for chicken and noodles??

Of course I'll share. I'll make a new post since it is a different recipe. It is from the Everyday Food magazine. It may also be on some of the Campbell's cans of cream soup.

YUMMY!! Same if I switched out the sliced carrots for baby carrots?? I have everything else but the chicken I cant wait to try this!
