Crock Pot Herbed Pork and Gravy

6 cloves garlic, quartered
5 lbs pork roast, boneless
1 tsp salt
1 tsp ground thyme
1/2 tsp sage
1/2 tsp ground cloves
1/2 tsp dried rosemary,cruched
1 tsp grated fresh lemon peel
1/2 c water
3 Tbs cornstarch
3 Tbs water
Cut small pockets into roast and insert garlic.
Mix salt, thyme, sage, cloves and lemon rind,rub mixture into roast.
Pour 1/2 c water into crock ,then add the roast.
Cook on LOW for 9- 10 hours.
Use the water and cornstarch to make a gravy with the juices
